Barley Risotto Recipe - The Daily Green

Risotto is normally an Italian dish made from Arborio rice. This variety of rice makes a creamy sauce when it is slowly cooked with stock, butter and cheese. Pearl barley, high in soluble fiber and vitamins, is one grain we should eat more often.
